Meet our new Head Chef Bobby Southworth
Our new Head Chef Bobby Southworth describes his food as “flavourful, passionate and surprising.” He first started cooking when he was 19 years old whilst working as a kitchen porter in Falmouth. Although he admits he never thought that he would be a chef, he fell in love with it as soon as he began experimenting and his obsession grew from there. He tells us:
“I’m the kind of person who, when a door opens, I just jump right through. The Greenbank has such a great reputation and I wouldn’t want to be anywhere else. A friend of mine said to me: ‘If you ever get a chance to work with Nick Hodges (our Executive Chef), then do it’. It was actually Nick that called to ask if I wanted to work with him at the Water’s Edge – and I was so glad he did.
Being Cornish born and bred, I’m passionate about provenance. My inspiration for our new spring menus is driven by my love of food and of course Cornwall. Our kitchen team attempt to highlight the very best local produce but for a Cornish market; you could say ‘tasting the views’.
With one of the county’s liveliest fishing ports on our doorstep, we’re lucky to have an abundance of first class fish and seafood at our finger tips. We like to take our pick of the day’s catch and serve it with olive crushed new potatoes, spring greens and lemon caper butter. Simple but oh-so-good.”
After the hearty meals of winter, spring and summer flavours are all about freshness. Expect a celebration of what’s in season – including rhubarb, seaweeds, samphire, scallops and seasonal berries.
When the temperature starts to rise, our sun-drenched terrace is the ultimate spot for lazy lunching. There’s something very Cornish about grazing over smoked salmon, fresh hand-picked crab and warm focaccia with a glass of something good, overlooking Falmouth harbour.
